Couscous edamame feta filled romaine hearts with curry paprika lemon pepper sea salt and olive oil

I love fresh fruits and vegetables. My mother was first and formally a pastry chef before becoming a mother to my sister and I. As a child I always found myself in the kitchen, watching her cook, prep a dish or just to lick the fresh chocolate mousse batter off a whisk when her head was turned. I ave grown an appreciation for food and all that is involved in making it delicious from the food choice, prep, cook time, and presentation.

I am a lover of vegetables and olive oil.

I made this quick healthy filling dish one day in under thirty minutes.

Make your choice of couscous according to flavor.
I opted for the Near East brand of Couscous in Roasted Garlic & Olive Oil.

Rinse and dry three medium to large sized romaine hearts.

Lightly drizzle extra virgin olive oil on each heart.

Next fill each center of the heart with couscous, shelled edamame and crumbled feta.

Sprinkle sea salt, lemon pepper, curry, paprika, and another drizzle of olive oil.

For a little tang drizzle a little red wine vinegar with the olive oil at the end.

Warm hearts in the microwave or oven very briefly so that the flavors combine.
